Arugula Apple Beet Salad
Ingredients
  • 1 bag arugula or a combination of arugula and spinach
  • 2-3 roasted beets * rough chopped
  • 1 apple chopped (you could also use mandarin oranges or pears)
  • 1/3 cup walnuts chopped
Dressing
  • 3 Tbl white wine, champagne or apple cider vinegar
  • 1 tsp prepared yellow mustard
  • 1 tsp maple syrup
  • 2 Tbl water
  • sea salt and pepper to taste
Instructions
  1. Put all of the salad ingredients a large salad bowl.
  2. Whisk dressing ingredients in small bowl.
  3. Pour over salad and toss.
  4. *Roasting beets: Preheat oven to 375 degrees. Trim tops to about 1/2 of beets and save for another meal. Rinse any dirt or debris from the beets – some may need to be scrubbed clean. Put beets on a large piece of aluminum foil. (Optional: drizzle with olive oil, salt and pepper.) Fold foil over the beets and place in an oven-proof container. Roast for 30 minutes or until beets are tender. Cool and remove skins.
