Avocado Papaya Gazpacho
Ingredients
  • 1 1/2 cups tomato juice (Trader Joe’s or Campbell’s low-sodium)
  • 1 1/2 cups unsweetened pineapple juice
  • 1 ripe papaya or mango, peeled, seeded and diced
  • 1 green bell pepper (or any color bell pepper) seeded and diced
  • 1/2 red onion diced
  • 1 avocado cut into 1/4″ dice
  • 1/4 cup fresh lime juice
  • 6-10 dashes of Tabasco (about 2 tsp)
  • 1/4 cup cilantro finely chopped
  • sea salt and ground pepper to taste (optional)
Instructions
  1. In a large bowl, gently mix all of the ingredients. Cover and refrigerate for a couple of hours.
