Broccoli-Waldorf-Salad
Ingredients
  • 1 head broccoli stems trimmed and chopped and tops, cut into florets and
  • 1/2 cup red onion chopped
  • 1 apple seeded and chopped
  • 1/3 cup raisins
  • 1/3 cup peanuts or other nuts, like walnuts
  • 1 cup kidney beans
Dressing
  • 1/3 cup unsweetened homemade yogurt or small carton store-bought
  • 3 Tbl apple cider vinegar
  • 1 Tbl maple syrup
  • 1 Tbl prepared yellow mustard
Instructions
  1. Add all of the ingredients into a large bowl.
  2. Whisk the dressing ingredients in a separate bowl. Taste and adjust to your liking.
  3. Pour over broccoli salad ingredients and stir to combine.
