Chcocolate Chia Pudding-2
Ingredients
  • 2 cups non-dairy milk unsweetened
  • 1/3 cup chia seeds
  • 1/4 cup cacao powder (or cocoa powder)
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup (or more if you’d like it sweeter)
  • 1 carton fresh blueberries or frozen
  • 1/4 cup slivered almonds
Instructions
  1. In a medium-sized bowl, blend the cacao powder, vanilla extract, maple syrup and vanilla with a little plant milk until you get a paste.. Then add the rest of the milk. Stir to combine. Taste and if you’d like it sweeter, add more maple syrup or Stevia.
  2. Add the chia seeds and stir. Refrigerate for a couple of hours until the chia seeds swell, stirring once in a while to blend.
  3. When the mixture is pudding-like, put into individual serving dishes and top with blueberries or another of your favorite fruits and a few slivered almonds or just leave in the bowl and refrigerator for 4-5 days.
