Quinoa Salad with Mango Chutney
Ingredients
  • 1/2 cup uncooked quinoa rinsed
  • 1 cup water
  • 1/2 cup red onion diced
  • 1/2 cup red pepper diced
  • 2 green onions sliced
  • 1/2 small cucumber peeled and diced
  • 1/2 apple chopped
  • 1/3 cup raisins
  • 2 cloves garlic minced
  • 1/3 cup slivered almonds optional
Dressing:
  • 2 Tbl mango chutney store-bought or homemade
  • 1/3 tsp garam masala
  • 1/2 tsp curry powder
  • juice from 1/2 lemon
  • 2 Tbl apple cider vinegar
  • 1 tsp maple syrup
  • sea salt and pepper to taste
Instructions
  1. Cook quinoa according to package directions. Let cool.
  2. Put quinoa in a bowl and add remainder of the salad ingredients.
  3. Mix the dressing in a separate bowl and pour over quinoa.
  4. If using slivered almonds, toast in a dry frying pan for a few minutes until golden brown, add to the bowl.
  5. Stir to combine and let sit a few minutes for flavors to blend.
