Romain Salad with Kale
Ingredients
Salad
  • 1 head of romaine lettuce washed and chopped
  • 3 large leaves of kale washed and chopped
  • 2 carrots shredded
  • 1 apple seeded and cut into thin slices
  • 6 scallions white and green parts chopped
  • 1/2 cup dried cranberries , low sugar & no oil. Honestly Cranberries
  • 1/4 cup pumpkin seeds
Dressing
  • 1/4 cup tahini
  • 1 orange peeled
  • 2 cloves garlic chopped
  • 1-2 Tbl fresh turmeric rough chopped (or substitute1/2 tsp powdered turmeric)
  • 1/4 cup fresh lime or lemon juice (1 whole)
  • 1/4 cup fresh parsley chopped
  • dash of cayenne pepper
  • sea salt and pepper to taste
Instructions
  1. Place all of the salad ingredients, except the apple slices, into a large bowl.
  2. Place the dressing ingredients into a blender and blend on high until smooth.
  3. Drizzle the dressing over the salad ingredients and toss to coat.
  4. Place the apple slices around the bowl in an decorative pattern.
