Sweet Potato Casserole
Ingredients
  • 3 medium sweet potatoes peeled and cut into 3/4″ chunks
  • 1/3 cup pistachios chopped
  • 1/3 cup walnuts chopped
  • 1/3 cup fresh cranberries (frozen work. too)
  • 1/4 cup pomegranate juice
  • 1/4 cup orange juice
  • 3 Tbl maple syrup
  • 1/2 tsp Ceylon cinnamon
  • 1/2 tsp cardamom
  • juice from 1/2 lemon
  • sea salt and pepper to taste
Instructions
  1. Preheat oven to 350°F.
  2. Place all of the ingredients into a bowl and mix thoroughly.
  3. Place mixture into a casserole dish and cover with foil.
  4. Bake for 45 minutes to 1 hour or until potatoes are soft.
