Sweet Potato Hash Browns
Ingredients
  • 2 large sweet potatoes or yams. chopped
  • 1 large onion chopped
  • 1 large red or green pepper chopped
  • 1/2 tsp smokey paprika optional
  • 1/2 tsp sea salt or to taste
  • pepper to taste
Instructions
  1. Preheat a large nonstick skillet and add the onions. Cook until they start to brown slightly.
  2. Add the pepper, potatoes and spices and continue to cook, turning frequently so as not to burn. If you need to, add a little water and cover to help the cooking process, but uncover and let the water evaporate before serving.
  3. Salt and pepper to taste.
