Avocado Brownies
Ingredients
  • 1 ripe avocado about 3/4-1 cup
  • 1 cup unsweetened non-dairy milk
  • 1/4 cup pure maple syrup
  • 1/4 cup date sugar
  • 1 cup whole wheat flour
  • 1/2 cup unsweetened cocoa powder (or cacao powder)
  • 1 tsp baking soda
  • 1/2 tsp sea salt (optional)
  • 1/2 cup vegan chocolate chips (optional)
  • 1/2 medium banana mashed
  • 1/2 tsp liquid stevia (optional)* for sweeter brownies
Instructions
  1. Preheat the oven to 350°F and lightly grease an 8 x 8″ baking dish.
  2. In a food processor, combine the avocado, banana, non-dairy milk, maple syrup, and date sugar. Blend until smooth.
  3. In a large bowl, combine the whole wheat flour, cocoa powder, baking soda, and salt. Stir to combine. Pour the wet ingredients from into the bowl with the dry. Add the chocolate chips if you’re using and stir together until well combined.
  4. Sprinkle a few chocolate chips on top then bake in the oven for 20 minutes and check to see if they spring back. If not, bake for 10 minutes more, or until set.
  5. You should be able to stick a fork in the center and have it come out clean.
  6. Allow to cool for at least 15 minutes before serving.
