This plant-based recipe for beefless stew reminds me of the traditional American beef stew I had growing up. It always smelled heavenly and we used to enjoy family time around the table eating this hearty, comforting meal.

INGREDIENTS

Yellow Onion  Garlic  Celery Carrots  Mushrooms  Potatoes Frozen Peas  Tomato Paste  Italian Herbs Fresh Rosemary Smoked Paprika Vegetable Broth  Water  Salt & Pepper

INSTRUCTIONS

Saute onion, celery, & carrot.  Add garlic & mushroom 

Add the vegetable broth, potatoes, tomato paste, herbs, smoked paprika, salt, & pepper.

Cook for 15-20 mins or until potatoes are soft

INSTRUCTIONS CONT

Take about 1.5 cups of the broth and vegetables and blend in a blender

Return the blended sauce to the pot and stir to combine.

Add the thawed peas and heat through for about 5 minutes.

Serve
