I'm shocked and elated that there is a healthy and, might I add, very delicious alternative to sugary, dairy ice cream and one that's so simple, this vegan strawberry ice cream!
Put frozen bananas, strawberries, drained and soaked cashews, dates, and almond milk into a high-powered blender.
Blend, adding more milk if it seems too thick. Serve immediately or pour into a freezer safe dish and freeze.
TIPS
Top with walnuts or pistachios and sliced strawberries.Frequently turn off blender while blending to scrape down the sides and help blender to work.
