Here's my healthy take on eating savory, dinner-inspired dishes for breakfast loaded with protein, Vegan Huevos Rancheros Casserole.

EASY RACHEROS SAUCE

INGREDIENTS Yellow Onion  |  Garlic Jalapeno  |  Ancho Chili  Tomatoes | Vegetable Broth Cilantro | Fire Roasted Tomato

TOFU SCRAMBLE

INGREDIENTS Tofu  |  Onion Tumeric | Salt & Pepper

TOFU SCRAMBLE

Heat oven to 350°F Saute the chopped onions  Crumble the tofu and add to the pan along with the turmeric Stir to combine and continue to cook until most of the water is evaporated 

 Saute diced onion and pepper  Add the remaining sauce ingredients,  and simmer uncovered  Once the sauce has thickened, blend the sauce ingredients until smooth.

OPTIONS

Put some ranchero sauce on the bottom of your baking dish. Top with a layer of tortillas, and top with a little more sauce. Top with 1/2 of the tofu scramble, ranchero sauce, then another layer of tortillas. Add beans, scramble, sauce, and a final layer of tortillas.    Cover with foil and bake in the oven for 30 minutes. Bake at 350°  Serve with sliced olives, green onions. optional jalapenos, & sliced avocado.
