Whole Food, Plant-Based Casserole Recipes

These recipes aren’t just any ol’ plant-based, vegan casserole dishes. If you’re on board for a whole-food, plant-based diet, you know that vegan and plant-based are quite different. A vegan diet may include refined grains, sugars, more oil, and higher salt.

Plus, the more you see bloggers calling themselves “plant-based” and jumping into this space, the more you’ll find recipes with added oils, refined sugars, grains, or too much salt. 

It’s become harder to find other bloggers with the right plant-based ingredients. So, carefully read recipes to make sure they are in line with what you want to eat for your health.

I’ve personally curated the recipes in this roundup to ensure they’re appropriate for a whole-food diet. Most of these are very low in oil, refined sugar, and salt, but do check the ingredients. Eliminating salt and oil is easy, but if you’d like suggestions, head over to this article, Cooking without Oil, for some.

This vegan macaroni and cheese recipe is as easy as can be if you have the ingredients on hand. A box of whole grain elbow macaroni, soaked raw cashews, non-dairy milk, roasted bell peppers, and some seasonings for a creamy, no cheese-cheesy vegan dish that you’ll enjoy over and over again.

Tagines usually include some type of dried fruit such as raisins, dates, or apricots. This dish uses dried apricots. Oftentimes it can also include olives and/or nuts.
