Plant-Based Cinco De Mayo Menu

Start your cooking engines, peeps, it's almost Cinco de Mayo, and eating Mexican food is a great way to get more plant-based goodness. And, yes, I've been on a bean kick.
That's one reason Mexican food can be a good choice. Stick with beans and you can't go wrong. Make them into star-studded menu centerpieces and wow your friends into wondering why everyone doesn't eat this way!

Guacamole: mash avocados, add a little lemon and salt. Done!

Fun Cinco de Mayo Facts

It's no secret that Americans love to celebrate Cinco de Mayo, and Mexican food is the key component of any celebration.

Did you know that Americans consume over 81 million pounds of avocados each year on this holiday? That stat comes from the California Avocado Commission, and truly shows how huge this holiday is in the States.

If you're planning on celebrating this year, do you know exactly what you're celebrating? A lot of people think the 5th of May is the celebration of Mexican independence, but it's not.

The date marks Mexico’s victory in the battle at Puebla in 1862 during the Franco-Mexican war. Mexican independence day is actually September 16th.
